Low-Cal Carrot Halwa (Gaajar ka Halwa)
While traditional gaajar halwa can take anywhere between 2-21/2 hours to prepare, this recipe takes only 15-20 minutes! And it's healthy too. The best part is when you take a bite, you won't be able to tell the difference.

- 2 kilo(s) red carrots, grated
- 250 grams sugar (adjust the quantity as per taste)
- 250 grams mawa / khoa
- 2 tablespoon(s) clarified butter (ghee)
For the Garnishing
- almonds, chopped

- 1/2 teaspoon(s) cardamom powder
Low-Cal Carrot Halwa (Gaajar ka Halwa) Directions
- Crumble the mawa/khoa, chop the almonds and set aside.
- Grate the carrots, transfer into a thick bottom pan and cook over a medium flame till the juice from the carrots dry up.
- Now add sugar to release any additional water from the carrots and cook till the mixture dries up completely. Keep stirring to prevent the carrots from sticking to the pan.
- To this, add ghee and cook for 5 minutes. Then add crumbled mawa and cook over a medium flame. Keep stirring the mixture continuously for around 10 minutes or until the ghee begins to separate from the mixture and a few drops of it can be seen collecting on the sides of the pan. Remove from heat.
- Add the cardamom powder to the halwa and garnish with chopped almonds.
