We caught up with Chocolatier and Owner of Fantasie Chocolates, Zeba Kohli, at a wine-chocolate pairing workshop at the Pune Farmer’s Market in Mumbai. And we asked for a few tips on cooking with chocolate.
Heston Blumenthal will fill you in on the finer details, but Zeba shares these very basic rules in this video: “Don’t hurry chocolate ever! Seduce it.” Keep away from water and always use a double boiler when cooking with it.
