Ras Madhur (Quick 'n Easy Kalakand)
If you're fond of Kalakand, you'll love my mom's take on this traditional dessert that's easy to make, tastes delicious and is healthy too because it's made from cottage cheese. Called Ras Madhur - a moniker given by a group of my friends who polished off an entire batch one day - this modern mithai is ready in 15 minutes flat! While I prefer to use homemade cottage cheese prepared from full cream milk - primarily because it's not salty - you can use the store-bought version too, although I would suggest you hunt for an unsalted variety.

- 1 cup(s) cottage Cheese
- 1/4 cup(s) condensed Milk (modify the quantity as per the sweetness desired)
- 2 tablespoon(s) curd
- 2 tablespoon(s) milk Powder
- 2 tablespoon(s) cream (30-35% fat)
- 1/2 teaspoon(s) cardamom Powder
For the Garnishing
- pistachio Flakes
Ras Madhur (Quick 'n Easy Kalakand) Directions
- Mash the cottage cheese. Mix it together with all the other ingredients and transfer to a non-stick pan.
- Cook over a medium flame, stirring continuously till most of the liquid dries up. Now add the cardamom powder and mix well. The mixture should be moist and not completely dry because it will dry up further as it cools.
- Pour the mixture into a pan. The mixture should be of a soft mawa consistency. Make cuts in it of the desired shape – squares or diamonds - but do not try to pull them out right away.
- Garnish with pistachio flakes and refrigerate for an hour to help it set. This sweet tastes best at room temperature.
